Preparing Chunk Honey


Chunk honey is one of the most attractive ways of presenting honey. It consists of a piece of comb honey placed in a jar, and surrounded by run honey.


The piece of comb should be as large as the jar allows, and fully capped. The run honey should be as light in colour as possible, bearing in mind that the whole point of the presentation is to be able to look through the run honey, and see a beautiful piece of comb in the centre of the jar.


One of the difficulties of producing a perfect jar of chunk honey is the tendency for the comb to float. This is why the largest piece of comb possible should be used, and cut slightly proud of the top of the jar, so that the lid helps to secure it in place.
